Pork in Tomato Stew(Kinamatisang Baboy)

Ingredients

1 kilo pork spareribs
3 tbsps vegetable oil
2 medium white onions, diced
3 cloves garlic, minced
10 pcs medium tomatoes, chopped in cubes
2 leaves laurel
2 pcs green chillis
1 bunches pechay leaves
1 tsp salt
2 tbsp fish sauce


Cooking Procedure

1. Heat vegetable oil in a pot over medium heat. Saute tomatoes, onions, and garlic just until tomatoes gets tender.  Add salt.

2. Put the pork spareribs and saute for 3 to 5 minutes

3. Add water and bring to a boil.  Add laurel leaves, lower the heat and simmer, covered, for 15- 20 minutes until the  meat gets tender and sauce thicken.

5. Add pechay or bok choy, green chili  and season with fish sauce according to your taste. Simmer for 2 minutes.
