Tom Yum Soup(Thailand)

Ingredients


20 prawns (shrimp), medium size

20 squid (white), medium size
2 shallot(small onion)
4-5 cups chicken broth/soup stock
2 stalks fresh lemongrass, lightly pounded, (cut into 1 inch)
4 table spoons fish sauce

1 table spoon brown sugar
1/3 cup sliced fresh galangal or Ginger
1/2 cup straw mushroom or local fresh mushrooms, halved or whole
6-8 kaffir lime leaves, shredded(optional)
4 tbsps lime juice
6 crushed fresh chile peppers (or more to suit your taste)
Fresh (coriander) cilantro for garnish

Cooking Procedure

1. Wash the prawns and shell them without removing the tails. 

2. Bring chicken broth to a boil. Add lemongrass, onion, galangal and lime leaves. 

3. Boil then add mushrooms, fish sauce, sugar and lime juice. Add prawns, squid and fresh chili peppers. As soon as prawns turn pink (cooked through), and squid (cooked through).

4. Serve garnished with (coriander leave) cilantro.
