Mutton Caldereta

Ingredients:


1 kg mutton(goat, lamp)
3 tbsp white vinegar
1 small ginger

Marinade Ingredient:
1 cup sweet tomato sauce (or sweet style banana catsup)
2 pcs bay leaves (laurel)
1/3 cup sweet pickle relish 
2 tbsp soy sauce 
1 tsp cracked whole pepper 
1 tsp salt

Sauteing Ingredient:
1 tbsp vegetable oil 
2 tbsp margarine(butter) 
1 pc whole garlic(peeled and minced)
4 pcs onion, peeled and sliced

Final Ingredient: 
1 pc potato, peeled and halves,
1 pc bell pepper, thinly sliced,
2 pcs potatoes peeled and cut into bite sizes,
1 pc carrot, peeled and cut into bite sizes,
2 pcs chilli peppers, chopped
250 grams chicken liver, cooked and mashed (liver spread)
1/3 cup grated cheddar
2 cups sausages or hotdogs (sliced diagonally and slightly stir fried in oil)
1/3 cup pitted green olives .

Procedures:

1. Boil the goat meat or mutton meat first in ginger and vinegar. Put everything in a thick pot and let boil for about 25 minutes, after boiling discard the liquid and the ginger and rinse the meat once. Set aside.

2. In a mixing bowl or deep pan place the boiled meat and add all the marinade ingredients, soy sauce, tomato sauce, salt, laurel at pepper. Carefully mix everything until evenly distributed and meat is coated with the ingredients.

3. In a heavy pan, for sauteing ingredient,  heat the oil , margarine and sauté the garlic followed by the onion. Continue sautéing until onion is translucent. On top of the garlic and onion, carefully add the meat marinade mixture. Cover and let the liquid to boil.

4. When it boils, stir to blend the garlic and onion below with the meat and other ingredients. Lower the heat. Cover and be prepared for the slow process of simmering the meat. If the liquid is drying out, you can add hot water or broth if you have, one cup at a time.

5. Meanwhile prepare the final ingredients.

6. First add the halves potato and let it cook. When it is already tender and soft enough to make into paste, and put all the other final ingredients.  Lastly add cheese and chicken liver. Stir and continue cooking.

7. Transfer in a serving plate and serve with a lot of steamed rice.
