Chicken Potchero(Kapangpangan)

INGREDIENTS

500g chicken (cut in small pieces)

1 med cabbage (cut into square)

1 med carrot (sliced circle / diagonal halve)

100g baguio beans (halv)

1 med green/red bellpepper (sliced diagonal)

3 pcs. Banana(saba) (half/fried)

200g tomato sauce

3 tbsp. fish sauce

1 med onion (sliced)

3 cloves garlic (crushed)

Salt and cooking oil.


COOKING PROCEDURE

1. Boil the chicken in the pot with 2 cups of water, flavor with salt for 5 minutes and set aside.

2. Fry the Banana(saba), cabbage, baguio beans, bell pepper and carrots for few minutes until the texture changes and remove, set aside.

3. In the same frying pan, saute the garlic and onion until turns to golden brown, then add the boiled chicken, flavor with fish sauce and salt according to your taste.

4. After few minutes, add the tomato sauce and broth then simmer for 5 minutes.

5.  Then add all ingredients that you fried, Banana saba, cabbage, baguio beans, bell pepper and carrots.  Simmer for 3 minutes and done.
