Fried Chicken - Pinoy Style

Ingredients


1/4 cup calamansi or lemon juice
1/2 cup soy sauce
2 small sachet magic sarap mix
1 head garlic, minced
1 teaspoon salt
1/2 teaspoon pepper
1/2 kg chicken legs or thighs
3/4 cup flour
1/4 cup corn starch
1 tablespoon baking powder
2 eggs
canola oil

Instructions
In a bowl, combine chicken, calamansi/lemon juice, soy sauce, garlic, 1/2 teaspoon of the salt ,1/4 teaspoon of the pepper and magic sarap mix. Marinate in the refrigerator for about 2 hours to a maximum 4 hours.

Drain chicken from marinade and let it dry.

In a bowl, combine flour, corn starch, baking powder, and the remaining 1/2 teaspoon salt ,1/4 teaspoon pepper and magic sarap mix.  Mix it well.

Put the chicken in flour mixture to coat.  Then after dip and rinse in the beaten eggs then put again the mixture, until fully coated

In a wide, thick-bottomed pan over medium heat, heat about 2 inches deep of oil to 175 degree. Add chicken in batches and cook, turning on sides, until golden brown.  Cooking time 12 - 14 minutes.

Remove from pan and drain on a wire rack.



II. FRIED CHICKEN(Westernian)






Ingredients

1 kg Chicken (thigh, legs)
Cooking oil
1 cup of water

Marination:

1/2 cup milk
2 eggs
1 1/2 tsp salt
1/2 tsp chili powder
1/2 tsp white pepper
1/2 tsp garlic powder
1/2 tsp ginger powder
2 tsp vinegar



Chicken breading:

2 cups flour
1/2 cup corn flour
3 tsp salt
1/2 tsp chili powder
1/2 black pepper
1/2 white pepper
1/2 garlic powder

Dips:

5 tbsp yougurt
2 tbsp mayonaise
1/2 tsp garlic powder
1/2 tsp lemon

Cooking Directions 

1. Mix all ingredients for marination, then add the chicken and marinate for 30mins. to 1 hour. 

2. Mix all ingredients for breading.  Then remove the chicken from marination and dip to mixed breading, then dip in the water, after dip again into mixed breading.

3.  Heat the pot with cooking oil, and put the chicken.  Fry the chicken until turns to brown within 7 minutes.

4. For the dips, mix all the ingredients.
