Poqui Poqui


Ingredients

4 pcs eggplants
3 tablespoon veg oil
3 pcs tomatoes, chopped
3 gloves garlic, minced
2 pcs of onions, chopped
3 pcs eggs
2 pcs green chili, chopped
fish sauce, salt & pepper


Cooking Procedure

1. Grill the eggplants(or boil), then peel off the skin. And mash the eggplants.
2. Preheat the pan with oil, then saute the garlic, onion and tomatoes.
3. Add the eggplants and season with fish sauce, salt and pepper.
4. Add the beaten egg and mix all with the ingredients.  Add the green chili.    
5. Transfer to a plate and serve.
