Spanish Sardines(Homemade)

Ingredients:

1 kg. Fish(Galunggong, sardines)

300 - 400 ml. canola oil, olive oil or soya oil

1 tablespoon salt

1 magic sarap(small sachet)

2 tablespoon black pepper(whole)

5 cloves garlic

3 - 5 laurel leaves

1 pcs. carrots(sliced in circle or flower design)

5 red chili(siling labuyo)


Cooking Procedure:

1.  Clean the fish well and remove the head and tail. Drain the fish and set aside.

2.  In the pressure cooker or pot, arrange the carrots in the bottom to serve as protection for the fish  to stick on the pot, then add the garlic, laurel leaves and red chili.

3. Put the fish and arrange. Then put the black pepper, remaining chili, laurel leave and garlic.

4. Pour the salt, magic sarap and add the canola oil, make sure that all fish will fully submerge.

5. Cover the pot and put in the medium heat for 1 1/2 hours.  If you are using pressure cooker it will take 30 minutes.  Check until the fish will get tender and soft.

6.  To preserve you can keep in sterilize jar and refrigerate.
