Pinapaitan(Beef) -My Mother Version

Ingredients

 1 kilo beef internal organs (tripe, liver, kidney, heart, pancreas, small intestines)

 ½ kilo beef tenderloin

 2 pc medium size onion, chopped

 1 head garlic, minced

 1 pc ginger medium

 ¼ cup chopped spring onion

 3 pcs green chili

 4 Tbsp. salt

 1 tsp. ground pepper

 2 tbsps fish sauce

Instructions

1. Wash the internal organs (tripe, pancreas, heart & small intestines) with 3 Tbsp. salt to remove the odor. Then put in the pot with water and boil for 5- 10 minutes, remove from the pot. Cut into strip and set aside.

2. Cut the liver into cubes and cut the tenderloin in to strip, set aside.

3. Saute ginger, garlic and onion, when ti turns to brown color add the internal organs, including beef tenderloin. Stir until some broth comes out of the internal organs, and then add the liver. Season with salt and pepper and adjust according to your desired taste.

4. Stir for a few minutes until all remaining broth is gone and turns to oil, then add some water, just enough to cover all the ingredients.

5. Simmer until all organs and meat gets tender.

6. Add the green chili, season with patis and adjust according to your desired taste.

7. Serve hot and garnish with chopped spring onions.
