Bopis (Beef)

Ingredients


2 pounds minced beef lungs and hearts
1/2 cup vinegar
1 teaspoon salt
2 tablespoons canola oil
1 onion, peeled and chopped
4 cloves garlic, peeled and minced
1 tablespoon fish sauce
1 large carrot, peeled and minced
1/2 green bell pepper, seeded and chopped
1/2 red bell pepper, seeded and chopped
4 red chili , stemmed and chopped
1/2 cup annatto seeds diluted in 1 cup of water
4 bay leaf
salt and black pepper to taste

Instructions


1. In large pot, add beef heart and lungs, bay leaves, 1 cup of vinegar, 1 tablespoon salt and enough water to cover the meat. Bring to a boil and cook for 20 minutes.

2. Remove meat, let it cool down then dice the pork finely. Set aside.


3. In a wide skillet over medium heat, heat oil. Add onions and garlic and cook until softened. Add fish sauce.

4. Add minced beef heart & lungs, pour in annatto water (water from the diluted annatto seeds) and bring to a boil. Cook, stirring occasionally, for about 10 to 20 minutes or until liquid is mostly absorb and meat begins to sizzle.

5. Add carrots, bell peppers, and chili peppers. Add black pepper and salt, according to your taste. Continue to cook for about 2 to 3 minutes or until vegetables are tender-crisp.
